    great quote and the easiest meal of all time…

    On a completely unrelated note, we made the easiest meal of all time ever last night, and I thought I would tell you about it just in case you needed a good dinner option. Seriously, I can’t even call this a recipe because it was so easy. It was just us throwing things together. As I’ve said before, we are going for inexpensive, easy and healthy meals. We are adjusting to being a single income family and I have no energy to cook (or clean for that matter). I wish I had taken a picture of the meal last night, but I didn’t decide to blog about it until it was all gone and I realized how delicious it was. The only thing tricky about this is that you have to remember to start the Crock Pot in the morning.

    BBQ Chicken with Brown Rice and Veggies-
    -Put a pack of organic, boneless, skinless chicken breast in the Crock Pot. Cover it with water and put it on low for 6 hours. I probably ate 1/4 pound of chicken, which is 110 calories. If you are tracking, you should measure to be exact.
    -When you come home 6 hours later, your chicken is ready. Take it out of the Crock Pot and it will get all shreddy and perfect when you mash it with a fork.
    -Then add your favorite BBQ sauce. Here’s the key, READ THE INGREDIENTS IN YOUR BBQ SAUCE. Make sure you can pronounce and have heard of all the ingredients. None of this high fructose corn syrup bullshit. Find some clean BBQ sauce, it’s REALLY not that hard. We like any clean mustard based BBQ sauce. Amy’s has a good one, but last night we used something called Bootleggers BBQ sauce that Miles found at Whole Foods. The calories could really be a big range here. If you are measuring, check you calorie count.
    -We got some brown rice from the Whole Foods hot bar (about 1/2 cup each)- 100 calories. So lazy, right? You can buy a steam bag or cook your own brown rice, but Miles was bringing home dinner to his very pregnant and hungry wife and he went with the fastest possible way.
    -We also added some frozen organic mixed veggies that came in a microwavable steam bag. It was the Cascadian Farms organic California blend veggies from Whole Foods. It’s 75 calories for the whole bag, so 38 calories each.

    It’s awesome to be able to make such an easy, healthy, inexpensive meal. It took 5 minutes to make, clean up was completely minimal and it was DELISH.
